2018年6月13日〜15日、日本最大級のカフェ・コーヒー関連専門展である[CAFERES JAPAN 2018](http://caferes.jp)が東京ビッグサイトにて開催されました。

TSO international株式会社主催の本イベントはカフェ、コーヒー、ピザ・パスタ、お茶産業に関わるあらゆる食材・機材・サービス・情報を持つ企業が世界中より出展するカフェ・レストラン向けの商談展です。2013年から5年連続で規模を拡大しており、益々注目を集めるこれらの産業で販路拡大を行う絶好の場となっています。

取材に訪れたのは、イベント開催初日の13日の午前10時。既に受付前には多くの人だかりがで来ています。

[事前登録](http://caferesjapan2018visitors)の窓口は、当日登録窓口より空いているのでスムーズには入れます。

まず始めに訪れたのは、Pizza＆Pasta Show会場。会場内を少し歩くと多くのお客さんで活気づいていた、[淡路麺業](https://www.namapasta.net)/[沖物産](http://www.okiproducts.co.jp)のブース。担当者にお話を伺ったところ、真空製法と独自の配合で作られたパスタなので味に絶対の自信があるとのこと。冷めても麺がくっつかずに美味しくいただけるので、女子会にも最適だそうです。

次に訪れたのは、[PRO Kitchen Japan](https://www.prokitchenjapan.com)/[MARANA FORNI](http://www.maranaforni.it)のブース。一際目立つイタリア製のクールな赤色のガジェット、、、ではなく、ハイテクな窯が配置され、ピザ作りの実演中でした。 担当者さんにピザ窯について伺うと、この窯は炉床が回転、上下運動が可能で、窯内の温度をコンピュータで制御するハイテク窯であるとのこと。また、従来の石窯より耐久性が優れているのが特徴であるとのこと。他にも効率よく生地を伸ばしてカットするハイテク機械、超軽量のパーラー等が展示されていて、どれもフォルムがオシャレで、イタリア製品のセンスの良さを随所に感じます。

次は、アルコールパビリオン。[CHOGA CO.,LTD](http://www.choga.co.jp)のブースでは、無着色、人口甘味料不使用、酸味料不使用のリキュールを紹介しており、本物の果汁を使用したCHOGA社のリキュールは女性に人気で、写真のかき氷専用リキュールは世界初だそうです。

そして、スイーツパビリオンにあるソフトクリームメーカーの[NISSEI](http://www.nissei-com.co.jp)のブースにきました。現在北海道でブームとなっている締めらーめんならぬ、締めパフェが展示されています。またご褒美果樹園という果実入りドリンクを試飲提供しています。

飲料・食品エリアを訪れた時には11時を過ぎ、あたりを見回すと、ところ狭しと多くの来場者で賑わっています。多くのブースがひしめく中、ふらっと立ち寄ったのは、[カフェ・ボニーニ](http://www.caffebonini.jp)/[エクセルーチェ](https://www.exeluce.com)のブース。ここでは、なんと！巨大な高級パルメジャーノ・レッジャーノにバルサミコクリームをつけて食べるというなんとも贅沢な試食提供をしています。最後にエスプレッソを飲むことで、本場のエスプレッソの味を日本人に知ってほしいというのが狙いであるとのこと。イタリアと日本の食文化は似ており、例えば、パスタのコシのあるなしを判断できるのはイタリア人と日本人に共通している価値観であると担当者が語ってくれました。

珈琲の芳しい匂いに誘われて、隣のエリアのコーヒーパビリオンに移動します。極上珈琲生豆本舗では、様々なコーヒーの生豆がずらっと陳列されており、目を見張るものがあります。産地、標高、品種、精製方法、欠点、味等の細やかな表記があり、こだわりを感じました。

そして隣にあるナチュラルフードパビリオンへと向かいます。こちらのエリアでは自然素材を使用した身体に良い食品の数々が展示されていました。中でも目を引いたのが、[日本製紙](http://www.nipponpapergroup.com)のブースで展示されていた、酸を加えると緑から赤へと色の変化が楽しめる徳之島で無農薬栽培された茶葉を使った日本茶です。加齢による記憶力低下の抑制、食後の血糖値上昇の抑制、目の乾きの改善、LDLコレステロール値の低下が期待できるそうです。

そしてTokyo Café Showの奥にあるイベントステージでは、[日本バリスタ協会](http://www.jba-barista.org)主催のバリスタグランプリ2018が開催されました。

また、コーヒーマシン・厨房機器エリアにでは、ハイテク機器や本物のパンを使用したインテリアライト等のアイデア商品等が展示され多くの商談で活気づいていました。

テイクアウトデリバリーパビリオンにブースを構える[クラウンパッケージ](http://www.crown-grp.co.jp)では、可愛らしいものからユニークなものまで様々なパッケージが陳列されていて、パッケージのデザインもおいしさを伝える大事なパーツだと再認識させられます。

更に奥へ進むと店舗設備・店舗運営支援エリアで[シンエイ株式会社](http://www.shinei-japan.com)の一際輝くLEDパネル群が目に入ってきます。お客さんの目を引くことで、まさにその場で製品の宣伝効果を体現しています。

そして最後に辿り着いたのが、International Tea Show会場。大きなブースを設けていたのが、Brazilian Business Groupです。その一角で、ブラジルコーヒーとポン・デ・ケイジョというブラジルで最も親しまれているチーズ入りのもちもちパンを振る舞っています。こうした国際的ご当地メニューを発見できるのもこのイベントの魅力の一つです。

会場では商談が活発に行われていて、来場者にとって様々なビジネスチャンスが生まれていました。また、展示場内の各会場ではセミナーが実施されていて、カフェ・コーヒービジネスの成功のためのヒントが多く散りばめられていたと思います。また、各ブースそれぞれの特色がよくでていたので、展示場を見て回るだけでも、来場者は何かしらの気付きがあったことでしょう。どのブースも出展者の意気込みが見られ、今後ますます盛り上がるカフェ・レストラン産業の活気を肌で感じた一日でした。
